Description
A plain iron kadai is a traditional, uncoated cooking vessel made from raw cast iron or carbon steel, without enamel, non-stick coating, or seasoning (or very minimal factory oil coating).
It is one of the most authentic Indian cookware types, widely used for deep frying, curries, tadka, and high-heat cooking. Because it has no coating, it requires proper seasoning before regular use.
Over time, it develops a natural non-stick layer (patina) that improves cooking performance.
